Cauliflower Corn Muffins

First off, let me apologize for all the wind in my video! The weather this year has NOT been conducive to outdoor filming..... 

You may notice there are A LOT of cauliflower recipes on this site. What can I say? Cauliflower really is a health nuts best friend!

It is incredibly versatile and can be added into most recipes (it even substitutes as flower for baking!)

Cauliflower is also SUPER low in calories (only 25 cals in 1 cup) and high in nutrients. 

According to Healthline 1 cup of raw cauliflower contains

  • Calories: 25
  • Fiber: 3 grams
  • Vitamin C: 77% of the RDI
  • Vitamin K: 20% of the RDI
  • Vitamin B6: 11% of the RDI
  • Folate: 14% of the RDI
  • Pantothenic acid: 7% of the RDI
  • Potassium: 9% of the RDI
  • Manganese: 8% of the RDI
  • Magnesium: 4% of the RDI
  • Phosphorus: 4% of the RDI

How awesome is that?!

Cauliflower is also anti-inflammatory (important for people with an active lifestyle) and it has been shown to help prevent cancer and heart disease

Now let's get baking!!

Ingredients:

 1/2 Head Large Cauliflower, Steamed

1 Cup Unsweetened Almond Milk

2 tsp Apple Cider Vinegar

2 Tbsp Inulin

2 Tbsp Maple Syrup

1 Cup Corn Meal

1 Cup Caulipower Flour (other flours may be used, I use this brand to increase my veg!)

1/2 Cup Apple Sauce

1 Tbsp Baking Powder

1 Pinch Salt

1 Cup Corn

1 Egg White

Instructions:

Preheat Oven to 350

Combine Almond Milk with Apple Cider Vinegar and Set Aside

Mix Corn Meal, Caulipower, Inulin, Maple Syrup, Apple Sauce, Baking Powder, Salt and Corn in  Bowl or Kitchen Aid

Blend Steamed Cauliflower, Almond Milk/ Apple Cider Mixture and Egg White in Food Processor (or BlendTec) until Smooth

Pour Blended Cauliflower into Mixing Bowl and Combine All Ingredients

Scoop into Lined Muffin Pans and Bake approx 30 min (until fork comes out clean)
