Grain Free, Bean Free, Simple Veggie Burgers

These veggie burgers are 100% veg, 100% simple and they taste GREAT!

Most commercial vegetable patties contain A LOT of extra fat (some are downright greasy when heated) and the bulk of the patty is actually made from fillers such as beans and grains. 

Now don't get me wrong, I love me some beans! but we all know that vegetables are nutritionally superior so why short change your health?

I had never made a veggie burger before but I figured it couldn't be much different from making cauliflower tortillas and I was right:.)

I was pleasantly surprised by how easy it turned out to be!



 2 Cups Butternut Squash (skinned and deseeded)

1 Head Cauliflower

1/2 Cup Rough Chopped Parsley

2 Cloves Garlic

4 Mini Sweet Peppers

1/2 Courgette

1/2 Onion

2 Egg Whites

Juice of 1/2 Lemon

Pinch Chili Powder

Pinch Cumin

Lrg Pinch Salt

1/4 Cup Nutritional Yeast


Preheat oven 425

Blend Vegetables in Food Processor

Spread Roasted Vegetables onto Lined Cookie Sheet

Roast for 15 minutes

Allow to Cool 

Use Dish Towel to Squeeze out Extra Moisture

Mix in Eggs, Lemon and Spices

Make Patty Shapes with Hands and Place on Parchment Paper

Roast at 350 for 10 Minutes

Flip and Brown Opposite Side for 5 Minutes
