Easy Peasy Stuffed Mushrooms

All the goodness No Muss, No Fuss No Fat!!

I LOVE stuffed mushrooms but, unfortunately, traditional ingredients, such as goat cheese, are a problem. 

Ideal Body= Sacrifice!!!

Fortunately, I was able to come up with a bean stuffed mushroom which tastes GREAT! (it's my boyfriend's new favorite dish)


1 Cup Chickpeas

1/2 Onion

3 Cloves Garlic

2 Portabello Mushrooms

1 Lemon

Sm Handful Sundried Tomatoes

Sm Handful Basil

Salt to Taste


Preheat oven to 425

Remove stems from mushrooms

Blend in blender with all ingredients EXCEPT mushroom caps

Fill mushroom caps with blended Hummus filling

Roast 20 min or until mushrooms "juices" are flowing freely
