Cauliflower Tortillas

Often life is a toss-up. Do you give in to your cravings or follow your diet?

Luckily we all live in a time of significant advancement and change. We no longer need to choose between what we want and what we need.

These yummy, plant-based tortillas are a perfect example of how we can "have it all".

 

Ingredients

1 large head cauliflower

1/4 cup cilantro

2 egg whites

Garlic, salt and nutritional yeast to taste

 

Instructions

Rice cauliflower in the food processor

Steam riced cauliflower for five minutes

Strain steamed cauliflower. Use a dish towel to wring out extra liquid

Add remaining ingredients and mix well

Pat into flat patties (not too thin!) and place on parchment lined cookie sheets

Bake at 375 for 10 minutes, flip and brown opposite side.
