Cauliflower Rice- Lazy Dinner!

We are all busy and the truth of it is, while complicated and inventive recipes may be more interesting, long term health and fitness needs to be CONVENIENT!

I tend to go through phases with my cooking and lately, I am obsessed with cauliflower rice!

Why? Well, a filling, nutritious dinner of cauliflower is only 100-200 calories AND it's versatile and easy to do.

Ingredients:

1 Head (or 1 bag, if frozen) Cauliflower, Riced

3 Mushrooms, Chopped

1/4 Onion, Chopped

1 Handful Pea Sprouts, Chopped

1 Handful Arugula, Torn

1/2 Can Tomato Sauce

1 tsp Sriracha

1/4 Cup Nutritional Yeast

1 Pinch Salt

 

Instructions:

Set Aside Pea Sprouts and Nutritional Yeast

Mix All Other Ingredients in Sauce Pan

Heat Until Onion and Mushroom are Tender, Stirring Frequently

Combine with Pea Sprouts and Nutritional Yeast in Bowl
