Sweet Potato Jellies

I am officially in love with sweet potato! Sweet potatoes are high in fiber, vitamin C, beta carotene (and many other nutrients).

I first began to eat sweet potatoes regularly when I was leaning out for bodybuilding competitions. In fact, sweet potatoes are 1 of only 2 foods that I was allowed to eat pre-competition and let me tell you, when the only other option is plain chicken, they taste great!

I use sweet potatoes in a lot of different ways (roasting, blending, Veggie burgers, etc) but one of my favorites is this sweet potato jellies recipe.


1 Sweet Potato, Boiled and Peeled

1/2 Cup Lemon Juice

1/2 Cup Water

4 Tbsp Gelatin

1 Dropper Stevia

1 tsp Vanilla

1/4 tsp Nutmeg

1/4 tsp Cinnamon

1/4 tsp Ginger

Pinch Salt



Blend Boiled Sweet Potato Til Smooth and Set Aside

Combine 1/4 cup Lemon Juice and 1/4 cup Water With Gelatin, Mix Well

Combine rest of Lemon Juice and Water in Sauce Pan with Stevia, Vanilla and Spices

Bring to a Simmer

Stir in Sweet Potato and Let Heat for 2 More Minutes

Remove From Heat

Add Hot Mixture to Cold Water/ Gelatin Mixture

Mix Well

Pour Mixture into Silicone Molds

Refrigerate Til Set
