Fat Free, Sugar Free, Guilt Free Banana Cherry Meringue

Want a YUMMY Dessert without the Guilt?

I know I do! 

I swear sometimes I feel like if I even have to think about eating another veggie or egg white I'm going to lose it!!

You work hard all week and don't want to undo all your hard work BUT your next cheat day is 2 days away and you want a treat NOW !

What do you do???

My answer to this little conundrum is usually either Arctic Zero ice cream (the 130-160 cal pints) or some sort of meringue.

Meringue is great because it is fat free and can easily be sugar free (just use monksfruit) plus it only takes about 15 min to make.

Combine with fruit or veg (such as sweet potato) for a perfectly healthy, sweet treat everyone can enjoy!


1 bag thawed, frozen cherries

3 bananas

5 egg whites

1/2 Tbsp

3 drops stevia

1/2 tsp vanilla

1/3 cup monksfruit


Blend bananas and cherries in food processor until desired smoothness is achieved

NOTE: Caulipower, agar flakes or ground chickpeas may be added if a thicker fruit base is desired.

Pour fruit mixture into ramekins and set aside.

Place remaining ingredients into mixing bowl and beat (either electric beaters or high-powered mixer must be used) until egg whites form into stiff peaks.

Spoon meringue onto fruit mixture

Bake at 350 for 10 min (until meringue is lightly brown and crispy.)
