Fat Free, Sugar Free and Sinfully Delicious! Lemon Curd Meringue

Ok hands up. I admit this recipe is NOT for macarons. The problem with making macarons when you are on a low-fat diet is the inclusion of almond flour in the cookie base. 

Almonds, while delicious, are simply too high in fat to be considered part of a bikini diet.

Traditional macarons are also packed with sugar. Once again it's monkfruit to the rescue!!!

These lemon filled, meringue cookies are delicious enough to end the affair with macarons (or at least make you want to cheat!)

Ingredients

Meringue

2 lemons

1/2 cup monksfruit

 

Instructions

Preheat oven to 350

Line baking sheet with parchment paper

Pipe meringue into rose shaped cookies

Bake at 350 for 10 min

Combine juice of two lemons and monksfruit into a saucepan

Stir over low heat until monksfruit dissolves to form a simple syrup

Remove from heat and whisk in 1 egg white

Stir over low heat until thickens to a thin, foamy texture

Cover and place in the fridge until fully cooled and thickened

Spoon lemon curd onto cooled meringue cookies
