So little secret, I'm a bodybuilder who hates protein!!
Growing up my family was mostly vegetarian and as a young adult I was vegan for many years.
Yes, I care passionately about animal rights (which is why I only eat humane) but even more than that, I just don't enjoy animal products AT ALL!
Fruits and veggies are no problem for me. I can eat them by the cup and I actively crave vegetables if I don't get enough in the day.
BUT my 60 grams of animal protein... UGH! What a chore!!
That's why I came up with these butternut egg souffles.
and Lightly Sweet
They are a great protein snack on the go!!
3 egg whites
6 oz butternut squash
1/3 cup monks fruit
3 drops stevia
1 Tbsp bee pollen
Blend all ingredients in food processor until smooth
Pour into silicone egg cups
Steam egg cups in covered saucepan for 10 min
(you only need about 1 inch of boiling water in bottom of saucepan to steam)
Remove from steam and
(these can also be baked in a lined muffin tin at 350 for approx 20 min. If a fork is poked into middle and comes out clean, then they are done!)
